Single site Sauvignon Blanc from Macedon, Victoria.
Hand picked and destemmed. After two weeks fermenting on skins, our Sauvignon Blanc was pressed to old French oak to develop further. Unfined and unfiltered.
Textural, complex, soothing. Showcasing passionfruit and gooseberry characters typical of the variety, but backed up with texture. A wine giving complexity and acid crunch, suitable to complement both delicate and fatty dishes.
