Lapin 2021 - Cherry Sour 7.1% ABV

This Lapin celebrates the 2021 cherry harvest. We took our foedre-aged sour blonde ale and re-fermented it on organic Victorian Lapin cherries for two months. The result is a complex, tart and refreshing sour, showcasing lively cherry notes.

Gin Barrel Aged Berliner Weisse Finished on Peaches & Strawberries 6.8% ABV

We aged an imperial Berliner Weisse in 8 x 130L Tom Cat gin barrels for 8 months, then re-fermented on our house-mixed culture combined with 80kg of peaches and 60kg of strawberries.

Fresh, bright fruit flavours start the journey and a slightly herbal/citrus character helps finish off the pallet. A crisp sherbet-like acidity adds complexity to this refreshing sour beer.

Barrel Aged IPA Finished on Pear Juice 8.1% ABV

We aged a hop-forward IPA in bourbon barrels for two years; inoculated with a mixed culture with three strains of brett. Fresh pear juice was added for refermentation.

Lime, passionfruit and fresh pear are present on the nose, which also holds distinct hop aromas—quote unlike the fresh hop aroma of a young IPA. The palate displays an abundance of fruit with a restrained acidity.

Oud Bruin Ale 8.7% ABV

This beer was made using a base malt of 50% Munich malt, along with a selection of wheat, oats and base schooner malts. The resulting beer was aged in 225L French oak barrels for two years on our house culture.

Displaying earthiness and brown spice on the nose, the palate is balanced by malt sweetness and a tart, racy acidity.
